2 INGREDIENT GLP-1 PANCAKES

I made these 2 ingredient GRAIN FREE pancakes that stimulate your own GLP-1 hormone release the other day and was shocked at how incredible they were. The texture was actually fluffy not weirdly dense or sadly floppy. And the best part is they're actually good for you too. I'm not going to ramble on like recipe posts tend to do so here's the recipe and you can keep reading for all the benefits if you choose!

Ingredients

  • 1 plantain (green) 
  • 2 eggs

Instructions

  • Blend for at least 25 seconds
  • pour onto a hot griddle (that has oil) and flip once it starts to bubble 
  • THAT'S IT

You can sweeten them if you'd like or add vanilla, berries, chocolate chips etc but I thought they were pretty perfect as is. If you're like me and need a little something with your hot coffee, this felt like the perfect pairing with my coffee. 

Now for the benefits. Why is this healthy? 

Plantains are a great source of something called resistant starch. And resistant starches essentially are natural prebiotic, meaning they act as fuel for your good gut bacteria. This is important because the more good gut bacteria you have, the more it crowds out the bad. When it comes to the microbiome, a good or bad microbiome is determined by who has the majority: the good or the bad bacteria. This can also help reduce the risk of colorectal issues (which is on the rise), support healthier cholesterol levels, and reduce inflammation.

There's more! Resistant starches don't get broken as quickly as other starches, such as refined or white bread, so there's a slower rise in sugar after eating them. This makes plantains, specifically green ones, a potential carbohydrate option for those with suboptimal insulin/blood sugar regulation. It's important to reiterate that this benefit is specifically in the green plantains. The ones that are yellow or more mature don't have as much resistant starch because they convert into digestible sugars. 

Yet another benefit is their potential in supporting healthy weight. They trigger a natural release of GLP-1 hormones which helps you stay fuller for longer. And they produce fewer calories. 

You can see why this low effort recipe has quickly become a staple in my home. If you're not much of a cook or maybe don't find plantains in your local market, you can still get resistant starches from:

  • legumes
  • steel cut or rolled oats (NOT INSTANT OATS!) 
  • cooked and cooled potatoes
  • cooked and cooled rice
  • jicama 
  • green mangoes
  • green papaya
  • tiger nuts
